Camyoga's Classic Date Slice (Vegan & Gluten Free!)
Ingredients 500ml water 400g dried dates 350g plain flour 1tsp bicarbonate of soda 350g light brown sugar 200g porridge oats good pinch salt 350g margarine
Method Preheat oven to 180 degrees. Line the baking tray with baking paper. Place the water and chopped dates in a medium sized saucepan and bring to a simmer. Cook for approx 10minutes, uncovered on a low-medium heat, until the date mix is soft and thick. Stir occasionally. Remove from the heat and let cool to room temperature.
Sift the flour and bicarbonate of soda into a large bowl. Add the sugar, oats and salt and mix well. Add the butter using your fingers, working into the oat mixture. Combine thoroughly.
Press half of the oat mixture evnly into the baking tray. Sprad the cooked date mix over this then sprinkle with the remaining oat mixture. Press gently with the palm of your hand into the top.
Bake for approx 40min or until golden brown at the edges. Let cool completely before removing and cutting into pieces, 3x4.
Gluten Free version To make this gluten free, use Doves Farm Gluten Free Flour and make sure the porridge oats you use are gluten free too!
